Creative Sunday // I prepared a delicious jollof spaghetti
I've had a really interesting Sunday today as I spent my evening preparing a sumptuous meal. I decided to prepare spaghetti today. People prepare spaghetti in different ways but my favourite is jollof spaghetti.
I started by getting all my ingredients from the market. They include:
- A packet of Golden Penny Spaghetti
- 2 sachets of Gino tomato paste
- Spices: 2 sachets of Gino curry, a sachet of Spicity, goat flavour, a sachet of Larsor fish spice.
- 2 cubes of Star maggi
- Salt
- Groundnut oil
- Fish
- Carrot
- Green beans
- Onions
- Grinded pepper
I forgot to buy green pepper. If you love really spicy meals, you can add it too.
The Preparation
I started by seasoning my fish. I washed my fish and put them in a pot. I added salt, a cube of maggi, Larsor fish spice, pepper and a little water and boiled it. I turned the fish to allow the upper part to cook too. I was careful not to stir it so I don't break the fish. After a few minutes, my fish was ready.
I separated the fish from the seasoning water then I fried the fish.
After I finished preparing my fish, I put a clean pot of water on fire and allowed it to boil. Then I added my spaghetti. I broke it into pieces because I don't like my spaghetti strands too long. I allowed it to boil some more then I added salt. I tasted it from time to time to make sure it doesn't get too soft. When it got to my desired level of softness, I filtered it and covered it up.
Next I put my clean pot on fire and heat it up to dry. After this I added my groundnut oil and allowed it to get heated. Next, I added my onions, tomato paste, spices and the seasoning water from my fish. I added a little bit of extra water (so it will enable my spaghetti to cook and soften properly when I add it) and stirred then allowed it to boil. After this I added my sliced carrots and green beans and allowed it to boil too.
Few minutes later, I added my spaghetti bit by bit, then I stirred repeatedly in order to mix the sauce and the spaghetti together. After mixing properly, I tasted it to be sure that all ingredients are enough then I covered my pot and left it to boil.
Few minutes later, my spaghetti was done. The water was dry and it had softened properly. Viola! My delicious spaghetti jollof was ready!
I dished it for myself and my parents. It was still very hot when I took these pictures so they aren't so clear. Pardon me🤲
