Creative Sunday: Delicious Yam and Stew Prepared By Yours Truly

Hello family! On today's creative Sunday I present to you my very delicious yam and tomato stew.

INGREDIENTS

  • Fresh tomatoes
  • Sachet tomatoes
  • Fish
  • Pepper
  • Salt
  • Maggi
  • Spices : Spicity, Curry, kitchen Glory, Goat Flavour, Curry leaf.
  • Half tuber of yam.
  • Water

PREPARATION

I started my cooking by washing my fish and getting it seasoned. I added just 2 cubes of maggi, a little salt, pepper and very little water. I left it to boil. I turned the fish over to enable the upper part to cook as well. Few minutes later, my fish was ready. I poured them into a plate and covered it.

I proceeded to fry my fish. I simply separated the fish from the seasoned water then I fried them. After frying, I covered them and left it to cool off.

Step 1 shows my fish which is about to be cooked.
Step 2 shows my fish cooking.
Step 3 shows that my fish is ready.
Step 4 shows my fish being fried.

Being done with my fishes, I went on to get my ingredients for stew ready. First, I washed my fresh tomatoes and sliced them into tiny pieces. I sliced my onions and pepper as well.

I poured the sliced fresh tomatoes into a pot and added a little salt. Then I boiled it till it became very soft. I used a wooden spatula to stir it consistently till all the lumps were no more. (I do this instead of blending). My tomato became a mash. I added the sachet tomatoes to it and stirred then I kept it aside.

I proceeded to plucking my curry leaf. Sometimes people wonder why I use the granulated curry powder and still use the natural curry leaf in my stew. It's because the scents are different. The natural curry leaf gives a much stronger scent compared to the powdered one.
I washed the leaf and sliced it.

At this point all my ingredients were ready. I then placed the pot I wanted to use to prepare my stew on fire. I added my groundnut oil and heated it. When it was well heated, I added my onions but not all of it.

I stirred and let it fry a little and then I added my tomatoes. I continued to stir while it fried. Next I added my spices and a cube of maggi. I stirred again to have them properly mixed then I left it to boil.

A minute later, I added my fish seasoning water. This helps the stew to be even more tasty. Rather than using ordinary water, I use the water I extracted from my seasoned fish, meat or chicken. Depending on which one I used. I left it to boil a little.

Then I added my fried fish and stirred. I added my curry leaf and my remaining onions and stirred too. I left it to boil for one more minute then my stew was ready!

I proceeded to boil my yam.

I believe everyone knows the process because it's easy.

I simply divided my tuber of yam into two. I intended to cook only one part. I went on to cut them into different pieces, just the way I'd like it. After this, I peeked them, washed them and put them in the pot. I added water just enough to overshadow the yams then I left it to boil.

About 20 minutes later, I took a piece and divided it to see if it was soft. I added my salt and left it to cook some more. When the yams softened as I wanted, I filtered the water out of it and my yam was ready.
