Karedok, Sundanese Food With Raw Vegetables.

Hello everyone,
I'm very picky to any kind of vegetables. I only like some vegetables, like; spinach, kangkong, pakcoy and some vegetables that can be sautéed with a sweet taste. That's how I lived my life for 28 years without understanding the greatness of vegetables.

After learning a lot about micronutrients (protein, carbohydrates and fat), I understand why fiber is important for the body, because fiber will help the digestive process better, even if you eat foods that are high on the glycemic index, fiber will help digestion so that insulin spikes do not occur. The doctor has advised me to start getting used to eating vegetables every day, he said this will help my blood sugar to be stable, not easy to rise suddenly or drop drastically.

Once I occasionally observed my body, there was not enough daily fiber and the result was that it was difficult for me to defecate and my blood sugar was unbalanced, as a result I did not continue it and began to realize that fiber is very important for my body. I tried to like some green vegetables that I didn't like before, and later became very fond of lots of vegetables, I don't even pick any vegetables now, I can eat all vegetables even in their raw state.

Cooking vegetables to be more interesting is a good tip. Gradually, you will like it because you have eaten it so many times. Like a dish that I'm going to share with you right now, one that makes me like vegetables, even really like them!

Starting from eating at a Sundanese restaurant, ordering several menus that I had just heard of. Sundanese people must know very well about 'Karedok' which is a dish made of several thinly sliced raw vegetables then covered with a peanut sauce which is full of flavor, the dominant peanuts and palm sugar make it taste so perfect as a popular menu for the Sundanese people. .

I also call it a vegetable salad with a distinctly Indonesian taste, not only is the predominant sweet, spicy and savory also makes this vegetable salad broth unforgettable, ringing in our throats every time.

After returning from the Sundanese restaurant, I was very curious and wanted to learn a lot about karedok. There are so many tempting recipes on the internet and it makes me even more burning to try them at home. I don't forget to buy several types of vegetables that I will make based on karedok and of course special peanuts and palm sugar from my husband @isdarmady who sells all kinds of 100% pure palm sugar.

In a rush to prepare some ingredients to make karedok, my hand was injured by a knife cut, a little sore because I had to 'grind' or grind the peanuts with a traditional millstone. Luckily I had plaster and continued making karedok. I'm so excited!

One of the bucket list that will make me happy is being able to make karedok with good taste, so there are more variations of vegetables that I can make and can be eaten with great gusto.


KAREDOK
The Recipe


There are several ingredients that must be prepared, such as;

  • Several vegetables commonly used for karedok such as cabbage, long beans and cucumber.
  • 100 gr of peanuts without peeling the epidermis
  • 2 cloves of garlic and chili (adjust the spiciness level you want)
  • Tamarind water (soak tamarind and strain the water)
  • Salt, palm sugar and a little mushroom stock

After preparing the ingredients, here is the step by step for making karedok;

  • After weighing the peanuts and selecting the good peanuts, roast the peanuts in the oven or on a wokpan. When roasting peanuts, it must be over low heat because they are easy to burn if over high heat. Here I don't fry peanuts because it minimizes calories, but if you want it to taste fatter, you can fry it in oil.

  • After the peanuts are roasted on the wokpan, use a uleg to grind the peanuts and all the ingredients for the karedok sauce. This tool adds a special taste compared to using a chopper, peanuts can be smooth and release natural oil.

  • Then, add the garlic and red chilies, stir until all the ingredients are very smooth and finally add the tamarind water so that there is a sweet and savory salty taste. Add salt and palm sugar, again grind with a stone uleg.

  • The seasoned and mashed peanuts can be put into the wokpan and flushed with water. Turn on the stove and heat the karedok seasoning until the water evaporates. Karedok seasoning is ready to be served.

  • Pour it over the washed and cleaned vegetables, then the karedok can be eaten with rice. It would be more delicious if there is tempeh and fried tofu.

This sauce looks very good, it would be ideal to make a vegan Caesar salad, of course. I'm glad you appear in the photos cooking. This is a great weekend salad. Greetings @aswita

It's actually a bit like peanut butter with a little tamarind and hot chili peppers added, you can try this method if you're tired of all kinds of salad dressings. have a nice day!

Try adding a little chili with peanut butter, it's almost like that. Manor are you bored with the usual menu.
