Healthy Food Prep For My Vegan Guests

Hey, plant based people, it's good to talk to you after a while! Few of my vegan friends visited me yesterday so I wanted to prepare something nice, healthy and delicious for them. Similar to me, their diet consists of mostly raw foods with occasional home cooked meals and avoidance of heavily processed stuff.

You can't go wrong with making raw cookies with nuts and dates so that's what I did first. I chose cashews this time - they are the softest of them all with soft, uniformed consistency. Usually people tend to make these cookies with almonds or hazelnuts because they are more firm and easier to shape, but we don't mind getting our hands dirty. :)

It's always good to pre-soak the nuts for a few hours so that they are soft and release enzyme inhibitors (become easier for digestion). You can alter the recipe to your liking as it's very flexible. And I always do it arbitrarily without exact measures. What you'll need is:

  • Cashews
  • Soft dates
  • Cocoa powder
  • Peanut butter
  • Honey
  • Coconut butter
  • Tart cherries

Start by peeling off the dates that you soaked in hot water for a few minutes until they become soft and remove the pit. Grind the cashews in a food processor with a few tablespoons of cocoa powder. When it's done add the dates and continue processing. The texture should now be unified and have nice consistency.

Use your hands to make balls out of the paste and add one cherry inside each ball. Cookies are normally very sweet so we add cherries to balance out the flavor. Try to make them all to be in similar size.

This can be job done or you can go step further:

To a ball that's on a steam add 1-2 tablespoons of coconut butter (or coconut oil if you don't have butter), equal amount of peanut butter and equal amount of honey. Whisk it with a spoon well until it's unified. Now you can either dip the balls inside this topping (they might lose shape if soft) or you can sprinkle it on top like I did hear. This combination adds an earthy taste to the cookies which is really good.

I was left with some of that topping which I used to make these delicious banana sandwiches.

Make sure to defrost some berries of your choice beforehand. I've used raspberries and blackberries. You can also use kiwis, dates, strawberries, cherries and more.

Cut the bananas in half lengthwise. Spread the peanut butter filling created before and top with the fruits. Perfect breakfast idea and you can make it in 5 minutes.

I ended up making more healthy goodies for lunch and everything was a huge success. :) Until next time.

Peanut butter, dates, are great option to serve fruits as snacks. Coconut flakes, or almond are another option

Who said Vegan dishes are anything other than spectacular and scrumptious. This was delicious to look at it and it's certain that they tasted even better than this amazing look. A recipe that I'd love to try.🌺

Yes, pictures are nice but nothing can replace tasting these delicacies. :) Good thing is it's simple to make, although it requires few hours of work. All you need is a decent food processor. And the dessert with bananas is super simple and takes 5 minutes.

I don't know why other people haven't figured it out, but adding cherries compliments these truffles so well. :) No more overly sweet cookies. Glad you enjoyed it!

Served with pickled peppers with garlic and mixed salad, is that what I think it was? That combination must be really exciting 😉😋.
And what is the delicacy that is used to wet the tongue? Tea or wine? Or a bit of both?😊

Yes you have a great eye! :) Salad was served with some baked sweet potato and oyster mushrooms.
We are not really a drinking type so it was a lemonade that went with the delicacies. :)
